Home-style dishes are expertly given a modern twist, perhaps even a little Asian finesse, but the portions remain typically generous. Raw yellowtail, for example, is thinly sliced and dressed with a zesty coriander and citrus marinade, complemented by dried mulberries for a hint of sweetness, bread croutons, sea buckthorn and radish julienne.
