This magical town has a new point of interest in ‘La Residencia’ at Belmond Hotel. There, inside an old oil mill that dates back to the 17th century and still preserves the original Mallorcan tafona (oil press), chef Pablo Aranda serves modern cuisine, with a strong Mediterranean base and Arabic influences that speak of his native Granada. Their concept, which takes the form of a tasting menu and is described as ‘return-to-roots cuisine’, draws its inspiration from the poetic world of Federico García Lorca (they also offer a vegetarian menu within the same framework). In the summer months, weather permitting, the dining room moves out to the terrace, which is truly romantic and offers incredible views of both Deià and the Tramontana mountains. Our recommendation? We particularly liked the dish called Albayzin, made with baby prawns, pork jowl, pear and lemond in brine.
