Argentine chef Paulo Airaudo’s flagship restaurant has set a new course following its move to the iconic Hotel Maria Cristina (one MICHELIN Key), which boasts over a century of history, elegance, and distinction. Here, at the mouth of the Urumea River and practically across from the Kursaal, the Amelia restaurant aims to continue growing through a contemporary-creative cuisine where flavour takes centre stage and, above all, leaves no one indifferent. The approach, rich in nuances, draws inspiration from the Cantabrian Sea, its primary source of inspiration, featuring an open kitchen and a special focus on the bar, as they advocate for a close connection between the chef and the diner. It also evolves into what the chef defines as an ‘Italian omakase’, where his transalpine roots find the perfect counterpoint when combined with Japanese flavours. The experience revolves around a single seasonal tasting menu, with a pairing option (the harmony can be alcohol-free).
