After the success achieved in Comporta, Cavalariça chose Évora, the oldest city in the Alentejo, to open another outpost. This time, the setting is the grand Palácio dos Duques de Cadaval, a fourteenth-century building now transformed into a vibrant space, full of cheerful colours that foreshadow the energy of the flavours served at the table. The menu celebrates sharing, with petiscos and dishes conceived to share at the centre of the table, complemented by a tasting menu called Cavalariça Experience (7 courses). Among the suggestions, standouts include Empanadas filled with lamb stew with seaweed sauce, the unmissable Pluma de porco alentejano (fillet of Alentejo pork), served with smoked peppers, jus and lettuce and, for a fine finale, the dark‑and‑white chocolate mousse with cocoa biscuit and Portuguese milky coffee ice cream brings the experience to a close with delicacy and sweetness.
