Looking for Japanese cuisine at its purest? In the heart of the Chamberí neighbourhood, a stone’s throw from the Basílica de la Milagrosa, there is a restaurant that imports many of its raw ingredients and it is certainly an interesting proposal. Although it has a small dining room where wood is the star, it is the bar that takes all the limelight, as this is where the colourful chambers housing the matured fish (jukusei) can be seen. The à la carte, heavily focused on these matured fish for the preparation of nigiris, is quite comprehensive (oysters, starters, grilled fish, nori, etc.) and is well supported by three tasting menus: Umi, Tochi and Hoshi. They also offer the option of adding a caviar tasting to any of their set menus!
