Run by Hugo, Thomas and Pierre – aka HuThoPi – this compact restaurant a stone's throw from the Marché d'Aligre boasts a vibrant, unpolished decor with exposed stone walls, hardwood floors, jars of fermented vegetables and an open kitchen. Having worked at some top eateries, from luxury hotels to trendy restaurants (Le Meurice, Plaza Athénée, Oka, Cobéa, L'Ours etc), the three friends serve vegetable-forward, wholesome and balanced cuisine based on seasonal produce: Marmande tomatoes and piperade espuma, yellowtail crudo and ajoblanco, red mullet with saffron sabayon, Paimpol beans and lardo di Colonnata.
