After years at Prism in Berlin, Gal Ben Moshe is rising to a new challenge in Prague, bringing his Levantine-inspired cuisine to the elegant restaurant of boutique hotel Bookquet. A six-course set menu has been created under his direction – it is influenced by his Israeli homeland, but Asian influences can be detected, too. The wine pairings are also of interest.
