The chef’s culinary journey began with reading a cookbook called ‘Memos on Cooking’. He mixes and matches Japanese and Western ingredients and cooking styles, creating novel flavours. Filtering through his experience in French cuisine, he layers ingredients to create new culinary expressions. In a nod to modern sensibilities, pairings are recommended for marriage with each dish. The roots lie in ‘terroir’ and hometown cooking, in both France and Japan.
