In the picturesque medieval historic centre, the kitchen is in the hands of a young and talented cook, Andrea Astolfi, who celebrates the local area with passion, pairing more traditional offerings with some creative dishes. Among the most accomplished: the almond granita with Argentario pink prawns, peas and elderflower; the orzotto with artichoke cream, egg yolk and black garlic; and the lombrichelli with butter, anchovies and truffle.
