Äponem, housed in a 17C presbytery, converted into an inn, means "happiness" in the language of the Pataxó, a Brazilian people. Gaby Benicio, a Brazilian sommelière at the head of a cellar of over 1000 labels, gives free rein to her joie de vivre. The enticing interior features a large window overlooking the hillside and lake, varnished chestnut wood tables, pretty tableware and contemporary cutlery. Raquel Sobral, also Brazilian, with stints with Alex Atala (D.O.M., in São Paulo) and Ferran Adrià under her belt, crafts creative kitchen garden cuisine with veg, flowers and herbs from the estate’s sprawling permaculture plots, peppered with Amazonian influences, depicted by manioc flour gougère paired with a tapenade of ewe’s milk cheese from Aveyron.
