"Pine resin" plates charcoal-grilled morels stuffed with pickled burdock and pine needles over edible flowers and crispy lichen for a memorable dish. Sablefish, glazed with fermented spruce "bbq sauce" is given a tableside pour of dashi broth. Finally, beeswax is served two ways, as an almond cake with koji beeswax butterscotch and a custard with pear sorbet and bee pollen.
