Mélanie Zervos and her partner Mickaël Cappella welcome you to their restaurant in this small village between Mirepoix and Pamiers. The chef shines a spotlight on the local terroir: salad of pork trotters and herring "like a stuffed onion" on a potato emulsion, for a surf/turf dish that packs a punch; medallion of veal cooked until still pink in the centre, basil and vegetables from nearby market gardens; a deconstructed millefeuille that delivers on all its promises in terms of textures… Culinary bliss!
