Picture a traditional Ardennes edifice in the Samson Valley whose interior is cosily pleasant and homely… Garde Manger (“larder” in English) inevitably brings a smile to our lips, which is largely thanks to the inspired recipes of Christophe Durand. He subtly reinterprets the authentic flavours of foie gras and juicy cuts of beef, pairing them with deftly crafted side dishes such as seaweed or an espuma of Belgian Herve cheese that add a fascinating kick to the main ingredient.
