Chef Apiradee Thirakomen, who goes by "Thiou", has set up shop on the Right Bank, in a small hotel just off the Champs Élysées. In a chic, intimate atmosphere, you can sample the Thai specialities that have made her reputation. Some have a French twist: prawn ravioli with coconut cream flavoured with lemongrass, pad thai, "Crying Tiger".
