"Too much of anything is bad, but too much Champagne is just right." This is the line that inspired the owner to name this restaurant after the author F. Scott Fitzgerald, and it is the motto of the establishment. The audacious wine pairings are as remarkable as the dishes and keep us coming back for more. Michael Verhagen likes to give those great wines a run for their money by juxtaposing them with modern French cuisine. The sauces showcase his conventional culinary skill, and he builds his dishes on this foundation. For instance, his scallops come into their own in a dish with chicory and different textures of Parmesan, as well as a spicy creamed sauce. The subtlety with which he does this and the tantalising interplay of flavours and textures demonstrate this chef's command of his subject. Fitzgerald has panache, as does the decor. Italian marble merged with design and vintage features, the large glass windows, the beautiful courtyard garden. A vibrant restaurant!
