Close to Saint-Jean-de-Luz and the coast, this old Basque farmhouse has a more modern wing overlooking the Rhune (Larrun) mountain and the countryside. It is here, in the heart of the Basque Country, that Cédric Béchade and his wife Marion decided to set up shop. He is hardly an unknown in the gourmet world: previously sous-chef to Jean-François Piège at the Plaza Athénée, he trained in Biarritz at the Hôtel du Palais under Jean-Marie Gauthier before joining the Hostellerie de Plaisance after the departure of one Philippe Etchebest. In the kitchen, this creative chef uses high-quality Basque ingredients, treating them with all the care they deserve.
