His balanced, unequivocal dishes are pure-bred southern in inspiration and heritage. For example, his famous Costières pigeon, roasted whole; biscuit of Mediterranean seabass and bourride (fish, seafood and garlic); different textures of pears/hazelnuts, with bergamot as a guiding thread… The overriding coherence is crystal clear.
